Chicken and Potato Bake

Here’s a simple and hearty Chicken and Potato Bake recipe that’s easy to make, full of flavor, and perfect for a cozy dinner. The tender chicken and crispy potatoes are baked together in a savory, herb-infused sauce. You can add some veggies for extra color and nutrition too!

Chicken and Potato Bake

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or breasts, if preferred)
  • 4 medium potatoes, peeled and cut into 1/2-inch cubes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream (or use milk for a lighter version)
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional for extra richness)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare the Chicken:

    • Season the chicken thighs with salt, pepper, paprika, and half of the rosemary and thyme. Set aside to marinate while you prepare the potatoes.
  3. Prepare the Potatoes and Vegetables:

    • In a large bowl, toss the chopped potatoes and onions with 1 tablespoon of olive oil, the remaining rosemary and thyme, and some salt and pepper.
    • Add the minced garlic and toss everything again until evenly coated.
  4. Assemble the Dish:

    • Drizzle the remaining olive oil into a large, oven-safe baking dish.
    • Place the seasoned chicken thighs in the center of the dish, skin-side up.
    • Surround the chicken with the prepared potatoes and onions, spreading them out evenly around the chicken.
  5. Add Liquids:

    • Pour the heavy cream and chicken broth over the potatoes. You can also drizzle a little bit of the cream over the chicken thighs to add extra moisture.
    • If you like, sprinkle the grated Parmesan cheese over the top of the potatoes and chicken for extra flavor and a golden crust.
  6. Bake:

    • Cover the dish loosely with aluminum foil and bake for 35-40 minutes.
    • After 35 minutes, remove the foil and bake for an additional 15-20 minutes or until the chicken skin is golden and crispy, and the potatoes are fork-tender.
  7. Serve:

    • Once baked, remove from the oven and let the dish rest for about 5 minutes before serving.
    • Garnish with fresh parsley if desired for a pop of color and freshness.

Optional Add-ins:

  • Veggies: You can add other vegetables like carrots, bell peppers, or zucchini around the chicken and potatoes for more color and flavor.
  • Cheese: Top with shredded mozzarella or cheddar cheese in the last 5 minutes of baking for a melty finish.
