Here’s a simple and comforting Chicken and Carrot Soup recipe that’s nourishing and perfect for a cozy meal:

Ingredients:

  • 1 lb boneless, skinless chicken breast or thighs (cut into bite-sized pieces)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4-5 large carrots, peeled and sliced (or cut into rounds)
  • 4 cups chicken broth (or vegetable broth for a lighter version)
  • 1 cup water
  • 1 teaspoon dried thyme (or fresh thyme)
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/2 cup frozen peas (optional, for added color and sweetness)
  • Fresh parsley (optional, for garnish)
  • 1 tablespoon lemon juice (optional, for a bright finish)

Instructions:

  1. Prepare the Chicken:
    • Heat the olive oil in a large pot or Dutch oven over medium heat.
    • Add the diced chicken pieces and cook for 5-7 minutes, stirring occasionally, until the chicken is lightly browned and cooked through. Remove the chicken from the pot and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add a bit more olive oil if needed. Add the diced onion and sauté for about 3-4 minutes until softened.
    • Add the minced garlic and sliced carrots to the pot. Stir and cook for another 3-4 minutes to soften the carrots a little.
  3. Add the Broth:
    • Pour in the chicken broth and water, then stir in the thyme, bay leaf, salt, and pepper.
    • Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for 15-20 minutes, or until the carrots are tender.
  4. Return the Chicken to the Pot:
    • Add the cooked chicken back into the pot, and stir to combine. If using peas, add them in at this point as well.
    • Simmer for an additional 5 minutes until everything is heated through and the flavors meld together.
  5. Finish and Serve:
    • Taste the soup and adjust seasoning with more salt and pepper if needed. You can also add a little lemon juice to brighten up the flavor.
    • Serve the soup hot, garnished with freshly chopped parsley if desired.

Tips:

  • For a Creamier Soup: Add a splash of cream or coconut milk in the last few minutes of cooking.
  • Add Noodles or Rice: If you’d like to make it more filling, add cooked pasta or rice to the soup after the carrots are tender.
  • Extra Veggies: Feel free to add other vegetables like celery, zucchini, or potatoes for extra flavor and nutrition.
