It’s an easy-to-make dish that’s perfect for a family dinner or special occasion. Here’s a recipe to create this indulgent meal:

Chicken and Broccoli Baked Alfredo

Ingredients:

For the Chicken and Pasta:

  • 2 boneless, skinless chicken breasts (or thighs), cooked and diced
  • 3 cups broccoli florets (steamed or blanched)
  • 12 oz penne or rotini pasta (or your preferred pasta)
  • 2 tbsp olive oil (for cooking the chicken)
  • Salt and pepper, to taste
  • 1/2 tsp garlic powder (optional, for extra flavor)

For the Alfredo Sauce:

  • 1/2 cup (1 stick) unsalted butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese (plus extra for topping)
  • Salt and pepper, to taste
  • 1/4 tsp ground nutmeg (optional, for a touch of warmth)

Instructions:

1. Cook the Pasta and Broccoli:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set aside.
  2. Steam the Broccoli: While the pasta cooks, steam or blanch the broccoli until tender but still bright green, about 3-4 minutes. Drain and set aside.

2. Cook the Chicken:

  1. Prepare the Chicken: Season the chicken breasts (or thighs) with salt, pepper, and garlic powder (if using). Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until fully cooked through and golden brown.
  2. Dice the Chicken: Once the chicken is cooked, remove from the skillet, let it rest for a few minutes, then dice it into bite-sized pieces. Set aside.

3. Make the Alfredo Sauce:

  1. Melt the Butter: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant and softened.
  2. Add Cream and Milk: Pour in the heavy cream and whole milk, stirring to combine. Bring the mixture to a simmer, allowing it to cook for 3-4 minutes, letting it thicken slightly.
  3. Add Cheese: Stir in the grated Parmesan cheese and shredded mozzarella cheese. Continue stirring until the sauce is smooth and the cheese has melted completely.
  4. Season the Sauce: Add salt, pepper, and a pinch of ground nutmeg (if using). Taste and adjust the seasoning as needed.

4. Combine and Assemble:

  1. Combine Pasta, Chicken, and Broccoli: In a large bowl, combine the cooked pasta, diced chicken, and steamed broccoli. Pour the creamy Alfredo sauce over the top and stir gently to coat everything evenly.
  2. Transfer to a Baking Dish: Grease a 9×13-inch baking dish and transfer the pasta mixture into it. Spread it out evenly.
  3. Top with Cheese: Sprinkle additional shredded mozzarella cheese on top for a golden, bubbly finish.

5. Bake:

  1. Bake the Dish: Preheat your oven to 375°F (190°C). Place the baking dish in the oven and bake for 20-25 minutes, or until the top is golden brown and the sauce is bubbling around the edges.

6. Serve:
