Here’s a delicious and easy Cherry Pie Bars recipe — they taste like cherry pie but are much simpler to make and perfect for sharing!


🍒 Cherry Pie Bars Recipe

Ingredients

For the crust and topping:

  • 1 cup (2 sticks) unsalted butter, softened

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1/4 tsp almond extract (optional, enhances cherry flavor)

  • 3 cups all-purpose flour

  • 1/2 tsp salt

For the filling:

  • 1 (21 oz) can cherry pie filling (or use homemade)

For the glaze (optional):

  • 1 cup powdered sugar

  • 2–3 tbsp milk or cream

  • 1/2 tsp vanilla or almond extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

  2. Make the crust/topping mixture:

    • In a large bowl, cream together butter and sugar until light and fluffy.

    • Beat in the eggs, one at a time, then add vanilla and almond extract.

    • Gradually add flour and salt, mixing until combined. The dough will be thick.

  3. Assemble:

    • Spread about 2/3 of the dough into the prepared pan. (Use a spatula or damp fingers.)

    • Spread the cherry pie filling evenly over the base.

    • Drop the remaining dough by spoonfuls over the top (it won’t cover it completely — that’s okay!).

  4. Bake for 35–40 minutes, or until the top is lightly golden and set. Cool completely in the pan.

  5. Optional glaze:

    • Mix powdered sugar, milk, and extract until smooth.

    • Drizzle over cooled bars.

  6. Cut into bars and serve!


🍒 Tips:

  • You can substitute with blueberry, apple, or peach pie filling.

  • Almond extract adds that classic cherry flavor, but it’s optional.

  • Store bars in an airtight container at room temp for up to 3 days or refrigerate for up to a week.
