Here’s a cozy, satisfying recipe for a Cheesy Veggie Bread Sandwich Bake – perfect for brunch, a potluck, or a quick family dinner!


🥪 Cheesy Veggie Bread Sandwich Bake

Servings: 6–8
Prep Time: 15 minutes
Cook Time: 30–35 minutes


Ingredients:

Base:

  • 8–10 slices of bread (white, whole wheat, or sourdough)

  • Butter or olive oil (to lightly toast or grease the bread)

Veggie filling:

  • 1 cup chopped bell peppers (any color)

  • 1 small red onion, diced

  • 1 small zucchini, diced

  • 1 cup chopped spinach (or kale)

  • 1/2 cup corn (optional)

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1/2 tsp Italian seasoning or dried oregano

Egg mixture:

  • 4 large eggs

  • 1 cup milk

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp paprika (optional)

Cheese:

  • 1 1/2 to 2 cups shredded cheese (cheddar, mozzarella, or a mix)


Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Sauté the veggies:

    • In a skillet, heat olive oil over medium heat.

    • Add onions, garlic, bell peppers, and zucchini. Sauté 3–5 minutes until softened.

    • Stir in spinach and corn (if using), cook 2 more minutes. Season with salt, pepper, and herbs.

  3. Prepare the bread:

    • Lightly toast the bread slices, or butter them if you prefer richness.

    • Lay half of the slices on the bottom of the dish (trim edges if needed to fit).

  4. Layer the bake:

    • Top bread layer with half of the sautéed veggies and a generous sprinkle of cheese.

    • Add the rest of the bread slices, more veggies, and top with remaining cheese.

  5. Whisk the egg mixture:

    • In a bowl, whisk eggs, milk, salt, pepper, and paprika.

    • Pour evenly over the entire casserole. Gently press down to help the bread absorb the egg.

  6. Bake:

    • Cover with foil and bake for 20 minutes.

    • Remove foil and bake another 10–15 minutes, until golden and bubbly.

    • Let sit for 5–10 minutes before slicing.


🧩 Tips & Variations:

  • Add cooked mushrooms, sun-dried tomatoes, or olives for more flavor.

  • Use plant-based milk and cheese for a vegetarian or dairy-free version.

  • Want it meaty? Add cooked sausage, bacon bits, or shredded chicken.
