Ingredients:

  • 1 sheet puff pastry, thawed (store-bought or homemade)

  • 1/2 lb (225g) sausage meat (Italian, breakfast, or ground pork sausage)

  • 1 cup shredded cheese (cheddar, mozzarella, gouda, or a mix)

  • 1 tsp Dijon mustard or tomato paste (optional)

  • 1/2 tsp garlic powder, 1/2 tsp onion powder (optional)

  • Salt & pepper, to taste

  • 1 egg, beaten (for egg wash)

  • Fresh herbs like parsley or thyme (optional)


Instructions:

  1. Preheat the oven:

    • Set to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Prepare the filling:

    • In a bowl, mix the sausage meat with seasonings, optional mustard/tomato paste, and shredded cheese. Stir until well combined.

  3. Roll out the pastry:

    • Lightly flour your work surface and roll out the puff pastry into a rectangle (if needed).

    • Cut into 2 long strips (lengthwise) or leave whole if making large rolls.

  4. Assemble the rolls:

    • Spoon sausage-cheese mixture in a log shape down the center of each pastry strip.

    • Fold one side of the pastry over the filling, then the other side to enclose it.

    • Press the seam to seal and place seam-side down.

  5. Cut & score (optional):

    • Slice into individual rolls (around 2 inches wide) or leave as logs and slice after baking.

    • Optional: score the tops lightly with a knife for decoration.

  6. Brush with egg wash:

    • Brush tops with beaten egg for golden color.

  7. Bake:

    • Bake for 20–25 minutes, or until golden brown and sausage is cooked through (internal temp should be 160°F / 71°C).

  8. Cool & Serve:

    • Let rest for 5 minutes. Serve warm with ketchup, mustard, or dipping sauce.
