Cheesy Rotel Tacos for Taco Tuesday

Here’s a fun and delicious recipe for Cheesy Rotel Tacos — perfect for Taco Tuesday! This recipe is cheesy, spicy, and super easy to make. You can use ground beef, chicken, or even turkey.


🌮 Cheesy Rotel Tacos

🕒 Cook Time: 15–20 minutes
🍽️ Serves: 4–6


🧂 Ingredients

  • 1 lb (450g) ground beef (or ground turkey/chicken)

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies, undrained)

  • 1 packet taco seasoning (or 2–3 tbsp homemade)

  • 1/4 cup water

  • 1 to 1½ cups shredded cheese (cheddar, Mexican blend, or Velveeta for extra creaminess)

  • Taco shells (hard or soft)

  • Optional toppings:

    • Shredded lettuce

    • Sour cream

    • Diced tomatoes

    • Jalapeños

    • Cilantro

    • Hot sauce


🔥 Instructions

  1. Brown the meat:

    • In a large skillet over medium heat, cook the ground beef until fully browned. Drain excess grease if needed.

  2. Add seasoning & Rotel:

    • Stir in the taco seasoning, Rotel (undrained), and water.

    • Simmer for 5–7 minutes, stirring occasionally, until the mixture thickens slightly.

  3. Make it cheesy:

    • Reduce heat to low and stir in the shredded cheese.

    • Let it melt and get gooey — you want a thick, cheesy, taco filling.

  4. Assemble tacos:

    • Warm your taco shells (microwave, skillet, or oven).

    • Spoon the cheesy Rotel taco meat into the shells.

    • Add your favorite toppings.


🧀 Tips & Variations

  • Extra creamy: Add 2 oz of cream cheese or a few Velveeta cubes.

  • Make it spicy: Use hot Rotel or add a dash of cayenne.

  • Low-carb: Use lettuce wraps instead of taco shells.

  • Nacho-style: Serve over tortilla chips for Rotel taco nachos!
