🧀 Cheesy Mashed Potato Puffs
Ingredients (makes about 12 puffs):

2 cups cold mashed potatoes (leftovers work great!)

1 large egg

½ cup shredded cheddar cheese (or your favorite melty cheese)

¼ cup grated Parmesan cheese

2 tbsp chopped chives or green onions

Instructions:
1. Preheat the Oven:

Preheat to 400°F (200°C).

Lightly grease a muffin tin (mini or regular size) or use silicone liners for easy removal.
2. Mix the Ingredients:

In a bowl, combine mashed potatoes, egg, cheddar, Parmesan, chives, and seasonings.

Stir until well blended. Add sour cream or cream cheese if the mixture feels too stiff.
3. Fill the Muffin Tin:

Spoon the mixture into the prepared tin, filling each cup about ¾ full.
