Cheesy Mashed potato puffs

Here’s a fun and delicious recipe for Cheesy Mashed Potato Puffs — crispy on the outside, creamy and cheesy on the inside. Perfect for using up leftover mashed potatoes or serving as an appetizer or side dish.


🧀 Cheesy Mashed Potato Puffs

Ingredients (makes about 12 puffs):

  • 2 cups mashed potatoes (preferably cold/leftover)

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • 2 large eggs

  • 1/4 cup milk or sour cream

  • 1/4 cup chopped green onions or chives (optional)

  • Salt and pepper to taste

  • 1/2 tsp garlic powder (optional)

  • 1/4 cup grated Parmesan cheese (for topping)


🧁 Instructions:

1. Preheat Oven:

  • Preheat to 400°F (200°C).

  • Grease a 12-cup muffin tin well or use silicone liners.

2. Mix the batter:

  • In a large bowl, combine mashed potatoes, eggs, milk or sour cream, shredded cheese, herbs, and seasonings.

  • Stir until well mixed.

3. Fill and top:

  • Spoon mixture into the muffin cups, filling each about 3/4 full.

  • Sprinkle with Parmesan cheese for a crispy golden top.

4. Bake:

  • Bake for 20–25 minutes, or until puffed, golden brown, and set.

  • Let them cool in the pan for 5–10 minutes before removing.


✅ Tips:

  • Add crumbled bacon or sautéed onions for a flavor boost.

  • Use a mini muffin tin for bite-size party snacks.

  • Can also be made in an air fryer using silicone muffin molds at 375°F (190°C) for 10–12 minutes.
