Cheesy Mashed Potato Muffins are a delightful twist on traditional mashed potatoes! These savory muffins are perfect for using up leftover mashed potatoes and make a great side dish or snack. They’re light, fluffy, cheesy, and full of flavor — plus, they’re so easy to make!


Cheesy Mashed Potato Muffins

Ingredients (Makes about 12 muffins):

  • 2 cups leftover mashed potatoes (cold or at room temperature)

  • 1 cup all-purpose flour

  • 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)

  • 2 large eggs

  • 1/4 cup milk (or cream for extra richness)

  • 1/4 cup unsalted butter, melted

  • 1/2 tsp baking powder

  • 1/2 tsp garlic powder (optional)

  • 1/4 tsp onion powder (optional)

  • Salt and pepper to taste

  • Fresh chives or parsley for garnish (optional)


Instructions:

1. Preheat the oven:

  • Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.

2. Mix the wet ingredients:

  • In a large bowl, whisk together the eggs, milk, and melted butter until well combined.

3. Add the mashed potatoes:

  • Stir in the leftover mashed potatoes, mixing until the potatoes break down and combine with the wet ingredients.

4. Combine the dry ingredients:

  • In a separate bowl, whisk together the flour, baking powder, garlic powder, onion powder, salt, and pepper.

5. Add the dry ingredients:

  • Gradually fold the dry ingredients into the wet mixture. Stir just until combined — be careful not to overmix, or the muffins may be dense.

6. Add the cheese:

  • Gently fold in the shredded cheese, ensuring it’s evenly distributed throughout the batter.

7. Spoon the batter into muffin tin:

  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. You can sprinkle a little extra cheese on top for a cheesy crust if you like.

8. Bake:

  • Bake the muffins for 18–22 minutes, or until they are golden brown on top and a toothpick inserted into the center comes out clean.

9. Cool and serve:

  • Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack. Garnish with fresh chives or parsley for a burst of color and extra flavor.
