Ingredients:

  • 2 lbs frozen hash browns (thawed or partially thawed)

  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom for a vegetarian option)
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese (or a combination of cheddar and mozzarella)
  • 1/2 small onion, finely chopped (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup cornflake crumbs or Panko breadcrumbs (for topping, optional)
  • 2 tablespoons melted butter (for topping, optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray or butter.

2. Prepare the Casserole Mixture:

  • In a large bowl, combine the melted butter, cream of chicken soup, sour cream, shredded cheddar cheese, chopped onion (if using), garlic powder, onion powder, salt, and pepper.
  • Add the thawed hash browns and stir until everything is well combined and evenly coated.

3. Assemble the Casserole:

  • Transfer the hash brown mixture into the prepared 9×13-inch baking dish, spreading it out evenly.
