You’ve got yourself a crowd-pleaser here! This Cheesy Hamburger Potato Casserole is cozy, comforting, and perfect for busy weeknights or potluck-style dinners. It layers thinly sliced potatoes, seasoned ground beef, and creamy, cheesy goodness—all baked until bubbly and golden.


🥔🧀 Cheesy Hamburger Potato Casserole

🍽️ Serves: 6–8

📝 Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 3–4 medium russet potatoes, peeled and thinly sliced (1/8″ thick)

  • 1 can (10.5 oz) cream of mushroom soup (or cream of cheddar)

  • 1/2 cup milk

  • 1 1/2 cups shredded cheddar cheese (plus more for topping)

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika (optional)

  • Salt & pepper, to taste

  • Cooking spray or butter (for greasing dish)


🔥 Instructions:

1. Preheat Oven:

  • Preheat to 350°F (175°C)

  • Grease a 9×13-inch baking dish

2. Cook the Beef:

  • In a skillet over medium heat, cook ground beef and onion until beef is browned.

  • Season with salt, pepper, garlic powder, and paprika.

  • Drain excess grease if needed.

3. Mix the Sauce:

  • In a bowl, whisk together cream of mushroom soup, milk, and 1 cup of cheddar cheese until smooth.

4. Assemble the Casserole:

  • Layer half the sliced potatoes in the bottom of the baking dish.

  • Spread half of the cooked beef over the potatoes.

  • Pour half of the soup-cheese mixture on top.

  • Repeat layers: potatoes, beef, then remaining sauce.

  • Top with remaining 1/2 cup of shredded cheese.

5. Bake:

  • Cover with foil and bake for 60 minutes.

  • Remove foil and bake another 10–15 minutes to brown the top and fully cook the potatoes.

  • Check doneness by piercing potatoes with a fork—they should be tender.

6. Cool & Serve:

  • Let sit for 5–10 minutes before serving to help it set.

  • Add steamed veggies or buttered corn on the side

  • Top with chopped green onions or a dollop of sour cream

  • Fridge: Store leftovers in an airtight container for up to 3–4 days.
