  • 1 lb (450g) ground beef

  • 1 small onion, diced

  • 3–4 medium russet potatoes, peeled and thinly sliced

  • 1 can (10.5 oz) cream of mushroom or cream of cheddar soup

  • 1/2 cup milk

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • Salt and pepper to taste

  • 2 cups shredded cheddar cheese (divided)

  • Cooking spray or butter (for greasing)

  • 1/2 cup sour cream (for a creamier texture)

  • Chopped green onions or parsley (for garnish)

  • Crushed Ritz crackers or French fried onions for a crispy topping

1. Prep Oven & Pan:

  • Preheat oven to 375Β°F (190Β°C).

  • Grease a 9×13-inch baking dish.

2. Cook Beef:

  • In a skillet over medium heat, cook ground beef and onion until browned.

  • Drain excess fat.

  • Season with garlic powder, paprika, salt, and pepper.

3. Prepare Sauce:

  • In a bowl, mix cream of soup, milk, and (if using) sour cream until smooth.

4. Layer the Casserole:

  • Arrange half of the sliced potatoes in the bottom of the dish.

  • Spread half of the cooked beef over the potatoes.

  • Spoon over half of the soup mixture.

  • Sprinkle 1 cup of cheese.

  • Repeat the layers: potatoes, beef, sauce, and top with remaining 1 cup cheese.

5. Bake:

  • Cover with foil and bake for 60 minutes.

  • Remove foil and bake for another 15–20 minutes, until potatoes are tender and top is golden and bubbly.

6. Cool & Serve:

  • Let sit for 5–10 minutes before serving.

  • Garnish with chopped parsley or green onions if desired.

  • Fridge: Keeps for 3–4 days in an airtight container.

  • Freezer: Can be frozen before baking. Thaw overnight and bake as directed.
