Here’s a hearty, comforting Cheesy Hamburger Potato Casserole — perfect for feeding a crowd or making ahead for busy nights. It’s layered with seasoned ground beef, tender potatoes, and melty cheese in a creamy sauce.


🧀 Cheesy Hamburger Potato Casserole

🛒 Ingredients:

For the Casserole:

  • 1 lb (450g) ground beef

  • 1 small onion, diced

  • 3 cloves garlic, minced (optional)

  • 4 cups thinly sliced potatoes (Yukon Gold or Russet; ~4–5 medium)

  • 1½ cups shredded cheddar cheese, divided

  • Salt and pepper to taste

For the Sauce:

  • 1 can (10.5 oz) cream of mushroom soup (or cream of cheddar, chicken, or homemade)

  • ½ cup milk

  • ½ cup sour cream or cream cheese (optional for extra richness)

  • ½ tsp paprika

  • ½ tsp onion powder

  • Optional: chopped parsley or green onions for garnish


🔧 Instructions:

1. Preheat Oven

  • Preheat to 350°F (175°C). Grease a 9×13-inch casserole dish.

2. Cook Beef

  • In a skillet over medium heat, cook ground beef with diced onion and garlic until browned.

  • Drain excess grease. Season with salt, pepper, and a little paprika if desired.

3. Make Sauce

  • In a bowl, mix soup, milk, sour cream (if using), paprika, and onion powder until smooth.

4. Assemble Casserole

  • Layer 1: Spread half the sliced potatoes on the bottom of the dish.

  • Layer 2: Add half the cooked beef mixture.

  • Layer 3: Pour half the sauce and sprinkle ½ cup cheese.

  • Repeat layers: potatoes, beef, sauce, then top with remaining cheese.

5. Bake

  • Cover tightly with foil and bake for 60 minutes.

  • Remove foil and bake uncovered for 15–20 minutes, until potatoes are fork-tender and cheese is golden.

6. Let Rest

  • Let sit for 5–10 minutes before serving to set the layers.


🥄 Tips & Variations:

  • Add Veggies: Toss in frozen corn, peas, or green beans between layers.

  • Spicy Kick: Use pepper jack cheese or add a pinch of cayenne.

  • No Canned Soup? Mix 1 cup béchamel sauce with ½ cup shredded cheese instead.
