🧀🍚 Cheesy Ground Beef Rice Casserole

📝 Ingredients:

  • 1 lb (450 g) ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup long-grain white rice (uncooked)

  • 2 1/2 cups beef broth (or water with bouillon)

  • 1 can (14.5 oz) diced tomatoes (drained) or tomato sauce

  • 1 cup shredded cheddar cheese (plus extra for topping)

  • 1/2 cup sour cream or Greek yogurt (optional, for creaminess)

  • 1 tsp chili powder

  • 1/2 tsp paprika

  • Salt and pepper, to taste

  • 2 tbsp olive oil or butter

  • Optional garnish: chopped green onions or parsley


🔥 Instructions:

1. Preheat Oven:

  • Preheat your oven to 375°F (190°C).

2. Cook the Beef Mixture:

  • In a large oven-safe skillet or pan, heat olive oil over medium heat.

  • Add diced onion and cook until softened, about 3 minutes.

  • Add garlic and cook 30 seconds more.

  • Add ground beef, season with salt, pepper, chili powder, and paprika.

  • Cook until browned and no longer pink, breaking up the meat as it cooks.

  • Drain excess fat if needed.

3. Combine Ingredients:

  • Stir in the uncooked rice, diced tomatoes (or tomato sauce), and beef broth.

  • Bring mixture to a simmer.

4. Add Cheese & Sour Cream:

  • Remove from heat.

  • Stir in shredded cheddar cheese and sour cream (if using).

5. Bake:

  • Cover skillet or transfer mixture to a baking dish and cover with foil.

  • Bake for 30–35 minutes, until rice is tender and liquid is absorbed.

6. Add Topping:

  • Remove foil, sprinkle extra cheese on top.

  • Return to oven uncovered for 5–7 minutes to melt and brown cheese.

7. Serve:

  • Garnish with chopped green onions or parsley if desired.

  • Serve hot!

  • Substitute ground turkey or chicken for a lighter version.

  • Add veggies like bell peppers, corn, or peas to boost nutrition.

  • Use brown rice—adjust baking time and liquid accordingly.
