Cheesy Garlic Bread Shrimp Grilled Cheese is an indulgent twist on a classic grilled cheese, combining garlic bread and shrimp with gooey cheese. The result? A deliciously savory sandwich that’s perfect for a comfort food craving!

Ingredients:

For the Shrimp:

  • 8-10 large shrimp, peeled and deveined

  • 1 tablespoon olive oil or butter

  • 1 garlic clove, minced

  • 1/2 teaspoon paprika (optional, for extra flavor)

  • Salt and pepper, to taste

  • A squeeze of lemon juice (optional)

For the Grilled Cheese:

  • 2 slices of bread (sourdough or any bread of your choice)

  • 2 tablespoons butter (for spreading on the bread)

  • 1-2 cups shredded cheese (mozzarella, cheddar, or a mix of both)

  • 2-3 cloves garlic, minced (for garlic bread flavor)

  • 1 tablespoon parsley, chopped (optional, for garnish)


Instructions:

1. Cook the Shrimp:

  • Heat olive oil or butter in a pan over medium heat.

  • Add the garlic and sauté for 1-2 minutes until fragrant.

  • Toss in the shrimp, sprinkle with paprika, salt, and pepper, and cook for 2-3 minutes per side, until they turn pink and are cooked through.

  • Squeeze a little lemon juice over the shrimp, then set them aside.

2. Prepare the Garlic Bread:

  • Butter both slices of bread with 2 tablespoons of butter.

  • Sprinkle the buttered sides with minced garlic for that garlic bread flavor.

  • If you want extra garlic flavor, you can mix the garlic into the butter before spreading it on the bread.

3. Assemble the Sandwich:

  • Lay one slice of the buttered bread, garlic side down, in a hot skillet or on a griddle.

  • Add a generous amount of shredded cheese on top.

  • Place the cooked shrimp evenly over the cheese.

  • Top with a little more cheese (this helps the shrimp stay in place) and the second slice of buttered, garlic side facing up.

4. Grill the Sandwich:

  • Grill the sandwich over medium-low heat for 3-4 minutes per side, until the bread is golden brown and crispy, and the cheese has melted.

  • Press down gently with a spatula while grilling to ensure the cheese melts evenly.

5. Serve:

  • Remove from the skillet, cut in half, and garnish with chopped parsley if desired.
