Here’s a hearty and delicious Cheesy Cowboy Soup recipe — packed with ground beef, beans, veggies, and of course, cheese! It’s a perfect comfort food, especially when you want something filling and easy to throw together.


🥣 Cheesy Cowboy Soup Recipe

Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 (15 oz) can diced tomatoes (with juice)

  • 1 (15 oz) can corn (drained)

  • 1 (15 oz) can pinto or black beans (drained & rinsed)

  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)

  • 1 cup potatoes, diced (optional, for heartiness)

  • 3 cups beef broth

  • 1 tsp chili powder

  • 1 tsp cumin

  • Salt and pepper to taste

  • 1 ½ cups shredded cheddar cheese (or more, if you love cheese!)

  • ½ cup heavy cream or milk (optional, for creaminess)


Instructions:

  1. Brown the beef:
    In a large pot or Dutch oven over medium heat, cook the ground beef until browned. Drain excess grease.

  2. Sauté aromatics:
    Add diced onion and garlic to the pot. Cook for 3–4 minutes until softened and fragrant.

  3. Add main ingredients:
    Stir in diced tomatoes, Rotel, corn, beans, potatoes (if using), and beef broth. Add chili powder, cumin, salt, and pepper.

  4. Simmer:
    Bring the soup to a boil, then reduce heat and simmer for 20–25 minutes, or until potatoes are tender.

  5. Make it cheesy:
    Stir in the shredded cheddar cheese until melted and smooth. Add cream or milk if you want it creamier.

  6. Serve:
    Taste and adjust seasoning. Serve hot with cornbread, tortilla chips, or crusty bread.


🧀 Optional Add-Ins:

  • Cooked bacon bits

  • Jalapeños for spice

  • Green onions or cilantro on top

  • A dollop of sour cream
