Here’s a comforting and filling recipe for Cheesy Beef Stuffed Potatoes — crispy baked potato shells loaded with savory ground beef, melty cheese, and flavorful toppings. Perfect as a main dish or hearty side!


🥔🧀 Cheesy Beef Stuffed Potatoes

🔹 Ingredients:

  • 4 large russet potatoes

  • 1 lb ground beef

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • ½ tsp chili powder or taco seasoning (optional)

  • Salt & black pepper to taste

  • ½ cup sour cream or cream cheese (for extra creaminess)

  • 1 cup shredded cheddar cheese (plus more for topping)

  • 2 green onions, chopped (for garnish)

  • Olive oil for brushing


🔥 Instructions:

1. Bake the Potatoes:

  • Preheat oven to 400°F (200°C).

  • Scrub potatoes clean, pierce each with a fork a few times, rub lightly with olive oil, and sprinkle with salt.

  • Bake directly on oven rack or on a tray for 45–60 minutes, until fork-tender.

  • Let cool slightly, then cut each potato in half lengthwise and scoop out the flesh (leave about ¼ inch around the skin to form a shell).


2. Make the Beef Filling:

  • While potatoes are baking, brown ground beef in a skillet with diced onion.

  • Once browned, drain excess fat and stir in garlic, paprika, chili powder, salt, and pepper.

  • Cook for 2–3 more minutes. Remove from heat.


3. Mix the Filling:

  • In a bowl, mash the scooped-out potato flesh with sour cream (or cream cheese).

  • Stir in the beef mixture and shredded cheddar cheese. Mix until combined and creamy.


4. Stuff and Bake:

  • Fill each potato shell with the beef mixture.

  • Top with a little extra shredded cheese.

  • Return to the oven and bake at 375°F (190°C) for 10–15 minutes, until heated through and cheese is melted.


5. Garnish and Serve:

  • Top with green onions, sour cream, or hot sauce as desired.

  • Serve hot!


🧊 Make Ahead Tip:

You can prepare and stuff the potatoes in advance, then bake them later. Great for meal prep or potlucks!
