🥔🧀 Cheesy Beef Stuffed Potatoes
🔹 Ingredients:

4 large russet potatoes

1 lb ground beef
-
1 small onion, finely diced
-
2 cloves garlic, minced
-
1 tsp paprika
-
½ tsp chili powder or taco seasoning (optional)

Salt & black pepper to taste
-
½ cup sour cream or cream cheese (for extra creaminess)

1 cup shredded cheddar cheese (plus more for topping)
-
2 green onions, chopped (for garnish)

Olive oil for brushing
🔥 Instructions:
1. Bake the Potatoes:

Preheat oven to 400°F (200°C).

Scrub potatoes clean, pierce each with a fork a few times, rub lightly with olive oil, and sprinkle with salt.

Bake directly on oven rack or on a tray for 45–60 minutes, until fork-tender.

Let cool slightly, then cut each potato in half lengthwise and scoop out the flesh (leave about ¼ inch around the skin to form a shell).
2. Make the Beef Filling:

While potatoes are baking, brown ground beef in a skillet with diced onion.

Once browned, drain excess fat and stir in garlic, paprika, chili powder, salt, and pepper.

Cook for 2–3 more minutes. Remove from heat.
3. Mix the Filling:

In a bowl, mash the scooped-out potato flesh with sour cream (or cream cheese).

Stir in the beef mixture and shredded cheddar cheese. Mix until combined and creamy.
4. Stuff and Bake:

Fill each potato shell with the beef mixture.

Top with a little extra shredded cheese.

Return to the oven and bake at 375°F (190°C) for 10–15 minutes, until heated through and cheese is melted.
5. Garnish and Serve:

Top with green onions, sour cream, or hot sauce as desired.
