Here’s a Cheesy Bacon and Sausage Breakfast Bake that’s hearty, indulgent, and perfect for feeding a crowd — whether it’s a lazy weekend brunch or a make-ahead weekday breakfast!


🧀🥓 Cheesy Bacon & Sausage Breakfast Bake

🔹 Ingredients:

  • 6 slices bacon, cooked and crumbled

  • ½ lb breakfast sausage (pork or turkey)

  • 1 small onion, diced

  • 1 bell pepper, diced (optional)

  • 6 large eggs

  • 1 cup milk (or half-and-half for extra richness)

  • 2 cups frozen hash browns (thawed)

  • 1½ cups shredded cheddar cheese (or cheese blend)

  • Salt & pepper to taste

  • ½ tsp garlic powder

  • ¼ tsp smoked paprika (optional)

  • 2 green onions or chives, sliced (for garnish)


🔥 Instructions:

1. Preheat oven to 375°F (190°C).
Grease a 9×13-inch baking dish.

2. Cook the meats:

  • In a skillet over medium heat, cook sausage until browned. Remove and set aside.

  • In the same pan, cook diced onion and bell pepper until softened (about 3–4 minutes).

  • Add back in the cooked sausage. Stir to combine.

3. Mix the base:

  • In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika.

  • Stir in hash browns, half of the shredded cheese, sausage mixture, and crumbled bacon.

4. Assemble:

  • Pour mixture into the prepared baking dish.

  • Sprinkle the remaining cheese evenly over the top.

5. Bake:

  • Bake uncovered for 35–45 minutes, or until eggs are set and top is golden brown.

  • Let rest for 5–10 minutes before slicing.


🍽️ Serving Suggestions:

  • Garnish with green onions, hot sauce, or a dollop of sour cream.

  • Serve with fruit, toast, or avocado for a complete breakfast.


🧊 Make-Ahead Tips:

  • Assemble the night before, cover, and refrigerate. Bake in the morning.

  • Leftovers keep well in the fridge (3–4 days) or freeze in portions.
