Here’s a simple, fresh, and flavorful dish: Cheese and Fresh Tomatoes on Toast — a quick go-to for breakfast, lunch, or a light snack that delivers comfort and taste in every bite.


🍞 Cheese and Fresh Tomatoes on Toast

Ingredients (serves 1–2):

  • 2 slices of good-quality bread (sourdough, whole grain, or rustic white)

  • 1 large ripe tomato or a handful of cherry/grape tomatoes

  • 1/2 cup shredded cheese (cheddar, mozzarella, gruyère, or feta crumbles)

  • 1–2 tsp olive oil or butter (optional)

  • Salt and pepper to taste

  • Fresh basil or parsley (optional)

  • Balsamic glaze (optional, for drizzle)


🔧 Instructions:

  1. Toast the bread:

    • Toast slices until golden and crisp (in a toaster or under a broiler).

    • Optionally brush with olive oil or butter for extra flavor.

  2. Prepare the tomatoes:

    • Slice the tomato thinly, or halve the cherry tomatoes.

    • Lightly season with salt and pepper to bring out the flavor.

  3. Add cheese:

    • Sprinkle shredded cheese on the toast. You can either:

      • Leave it as-is for soft cheeses (like feta), or

      • Pop under the broiler or in a pan to melt/harden the cheese slightly.

  4. Top with tomatoes:

    • Arrange the fresh tomatoes over the cheese.

    • Add herbs if using, and a light drizzle of balsamic glaze for a punch of flavor.


🧀 Variations:

  • Caprese Style: Use fresh mozzarella, tomato slices, and basil.

  • Savory Melt: Use aged cheddar and melt under broiler, then top with tomato and cracked black pepper.

  • Avocado twist: Spread mashed avocado under the cheese for creaminess.

  • Spicy version: Add chili flakes or a dash of hot sauce.
