CHARLEY’S STEAK

Posted on April 6, 2025

Charley’s Steak could refer to a variety of recipes or dishes, but I believe you might be asking about something inspired by Charley’s Philly Steaks, a popular chain known for its Philly cheesesteaks. If that’s the case, you’re probably looking for a recipe for a Philly cheesesteak or something similar.

Here’s a recipe for a delicious, homemade Philly cheesesteak, inspired by Charley’s famous sandwiches:

Homemade Philly Cheesesteak (Charley’s Style)

Ingredients:

  • 1 lb ribeye steak, thinly sliced (you can also use flank steak or sirloin)

  • 4 hoagie rolls or sub rolls (soft, slightly crusty rolls work best)

  • 1 medium onion, thinly sliced

  • 1 bell pepper, thinly sliced (optional, for added flavor and color)

  • 8 oz provolone cheese (or Cheez Whiz if you want to go authentic)

  • 2 tablespoons olive oil (or butter)

  • Salt and pepper, to taste

  • Garlic powder (optional, for extra flavor)

  • 1 tablespoon Worcestershire sauce (optional, for a savory touch)

Instructions:

1. Prepare the Steak:

  • Place the ribeye steak in the freezer for about 30 minutes before slicing. This will make it easier to slice the steak thinly.

  • After it’s firm but not frozen solid, slice the steak as thin as possible against the grain. Thin slices are essential for a tender cheesesteak.

2. Cook the Vegetables:

  • Heat 1 tablespoon of olive oil in a large skillet or griddle over medium heat.

  • Add the onion and bell pepper (if using) and cook, stirring occasionally, for about 5-7 minutes, or until the vegetables are softened and lightly caramelized. Season with a pinch of salt, pepper, and a sprinkle of garlic powder.

  • Once done, remove the vegetables from the pan and set them aside.

3. Cook the Steak:

  • In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high.

  • Add the thinly sliced steak to the skillet, spreading it out evenly. Season with salt, pepper, and a dash of Worcestershire sauce if desired.

  • Sauté for about 3-4 minutes, or until the steak is just cooked through. Make sure to stir occasionally to avoid overcooking.

4. Combine Steak and Vegetables:

  • Once the steak is cooked, return the onions and peppers to the pan. Stir everything together to combine and heat through.

5. Assemble the Sandwich:

  • Slice the hoagie rolls lengthwise but not all the way through, leaving a hinge. You want the roll to stay intact for holding the filling.

  • If you want the rolls toasty, place them under the broiler for a minute or so, just until golden.

6. Add the Cheese:

  • Once the steak and veggies are mixed, divide the mixture evenly and pile it onto the rolls.

  • Top with slices of provolone cheese (or Cheez Whiz if you prefer the classic Philly way).

  • If using provolone, you can cover the pan for about 1-2 minutes to melt the cheese, or you can place the sandwiches under the broiler for a few seconds to melt the cheese and toast the bread.

7. Serve:

  • Serve your Philly cheesesteaks immediately with a side of chips, fries, or a pickle.

Tips for the Perfect Philly Cheesesteak:

  • Steak Selection: Ribeye is the best option for cheesesteaks because it’s tender and flavorful. If you use a leaner cut like flank or sirloin, make sure to slice it very thin and cook it quickly to avoid toughness.

  • Cheese Options: While provolone is classic, Cheez Whiz is the traditional choice for an authentic Philly experience. You can also use American cheese or even Swiss if you prefer.

  • Toppings: You can customize your cheesesteak with other toppings like sautéed mushrooms, jalapeños, or even spinach, but onions and peppers are the classic combo.

  • Rolls: Make sure to use fresh, soft hoagie rolls. The right bread makes all the difference in the texture and flavor.

This homemade Philly cheesesteak is as close as you can get to the deliciousness of Charley’s Philly Steaks at home! Whether you prefer it with provolone, Cheez Whiz, or another cheese, this recipe is sure to satisfy your cheesesteak cravings. Enjoy!
