Cauliflower Soup is a creamy, comforting, and healthy soup that’s full of flavor. It’s perfect for colder days or when you’re looking for a nutritious meal. Here’s a simple and easy recipe for a creamy cauliflower soup:

Creamy Cauliflower Soup

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk (or heavy cream for extra richness)
  • 1/2 teaspoon ground cumin (optional, for added flavor)
  • Salt and pepper, to taste
  • 1 tablespoon fresh lemon juice (optional, to brighten the flavor)
  • Fresh parsley or chives, chopped (for garnish)
  • Croutons (optional, for topping)

Instructions:

  1. Prepare the cauliflower:
    Cut the cauliflower into florets, discarding the stem. Set aside.
  2. Sauté the aromatics:
    In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and cook for about 4-5 minutes, until softened and fragrant.
  3. Cook the cauliflower:
    Add the cauliflower florets to the pot and stir to combine with the onions and garlic. Cook for 3-4 minutes, allowing the cauliflower to begin to soften.
  4. Add broth and seasonings:
    Pour in the vegetable or chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 15-20 minutes, or until the cauliflower is completely tender.
  5. Blend the soup:
    Use an immersion blender to blend the soup directly in the pot until smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a regular blender, blend until smooth, and then return it to the pot.
  6. Add milk and season:
    Once the soup is blended, add the milk (or heavy cream for extra creaminess). Stir to combine and bring the soup back to a simmer. Season with salt, pepper, and cumin (if using). Taste and adjust seasoning as needed.
  7. Finish with lemon juice (optional):
    Stir in fresh lemon juice for a touch of brightness, if desired.
  8. Serve:
    Ladle the soup into bowls, and garnish with fresh parsley or chives. Add croutons on top for a bit of crunch, if desired.
