Cauliflower & Broccoli Salad Recipe


Ingredients:

  • 1 small head of cauliflower, cut into small florets
  • 1 small head of broccoli, cut into small florets
  • 1/2 red onion, thinly sliced (optional)
  • 1/2 cup shredded cheddar cheese (optional, or use a different cheese like mozzarella)
  • 1/2 cup cooked bacon bits (optional, for a smoky flavor)
  • 1/4 cup sunflower seeds or chopped nuts (optional, for added crunch)
  • 1/4 cup raisins or dried cranberries (optional, for sweetness)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar (or white vinegar)
  • 1 tablespoon honey or sugar (optional, for sweetness)
  • Salt and pepper, to taste

Instructions:

1. Prepare the Vegetables:

  • Cut the cauliflower and broccoli into bite-sized florets. You can steam the vegetables lightly for 1-2 minutes to soften them slightly, or leave them raw for more crunch, depending on your preference.
  • If you’re using red onion, slice it thinly.

2. Make the Dressing:

  • In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey (or sugar), salt, and pepper. Adjust the sweetness and acidity to your taste.

3. Combine the Salad:

  • In a large bowl, combine the cauliflower, broccoli, and red onion (if using).
  • Add the shredded cheddar cheese, bacon bits, sunflower seeds or nuts, and raisins or cranberries (if using). Mix everything together gently.

4. Add the Dressing:

  • Pour the dressing over the vegetables and toss to coat evenly.

5. Chill and Serve:

  • For best results, refrigerate the salad for about 30 minutes to an hour before serving. This allows the flavors to meld together.
  • Serve chilled as a side dish or light lunch.

Tips:

  • Make it Vegan: Use vegan mayo and skip the cheese and bacon for a plant-based version of this salad.
  • Add More Veggies: Feel free to add other veggies like carrots, bell peppers, or cucumbers for extra crunch.
  • Make it Creamier: If you prefer a creamier salad, you can add more mayo or even a little Greek yogurt for some tang.
  • Spicy Kick: For a little heat, add some diced jalapeños or a dash of hot sauce to the dressing.
