  • 1/4 cup cilantro

  • Juice of 1 lime

  • Salt to taste

For Assembly:

  • Corn tortillas (warmed)

  • Diced white onion

  • Chopped cilantro

  • Lime wedges

1. Marinate the Steak (Carne Asada):

  • In a bowl or zip-top bag, mix olive oil, lime juice, orange juice, soy sauce, garlic, jalapeño, cilantro, cumin, chili powder, pepper, and salt.

  • Add the steak and marinate for at least 1 hour (overnight is best for deeper flavor).

2. Make the Salsa:

  • Roast tomatoes, onion, garlic (in skins), and peppers on a dry skillet or under a broiler until charred (~10 minutes).

  • Let cool slightly. Peel garlic.

3. Grill the Steak:

  • Preheat a grill or cast-iron skillet over high heat.

4. Assemble the Tacos:

  • Warm tortillas until slightly charred.

  • Add sliced carne asada, spoon salsa on top, sprinkle with chopped onion and cilantro.
