🧂 Ingredients:

8 oz (225 g) cream cheese, softened

1 cup (100 g) sharp cheddar cheese, shredded

¼ cup (25 g) crumbled cooked bacon (about 3–4 slices)

2 tbsp green onions or chives, finely chopped

1 tsp garlic powder

½ tsp onion powder

½ tsp smoked paprika (optional)

Salt & pepper, to taste

Extra bacon, chives, or nuts, for coating

Mix the filling:
In a medium bowl, combine cream cheese, shredded cheddar, bacon, green onions, garlic powder, onion powder, paprika, salt, and pepper. Mix well until smooth and uniform. -
Chill the mixture:
Cover and refrigerate for about 20–30 minutes, or until the mixture is firm enough to handle. -
Form the cheese balls:
Scoop about 1 tablespoon of mixture and roll into mini balls. You should get around 18–24 mini balls, depending on size. -
Roll in coatings:
Roll each ball in your preferred coating (extra chopped bacon, chives, crushed pecans, or shredded cheese). -
Chill until ready to serve:
Refrigerate until serving time. They keep well for up to 3 days in an airtight container.
