π° Caramel Cream Cake
π§Ύ Ingredients (for a 20β22 cm / 8β9″ cake)
Sponge Cake:

4 large eggs (room temp)

120 g (2/3 cup) sugar

120 g (1 cup) all-purpose flour

1 tsp vanilla extract

Pinch of salt
Caramel Sauce:

200 g (1 cup) sugar
-
60 ml (ΒΌ cup) water
-
120 ml (Β½ cup) heavy cream (warm)

40 g (3 tbsp) butter
-
Pinch of sea salt (optional, for salted caramel)
Caramel Cream Filling:

400 ml (1β cups) heavy cream (cold)
-
2β3 tbsp prepared caramel sauce (adjust to taste)

1 tsp vanilla extract
-
1 tbsp powdered sugar (optional, for sweetness)
π§ Instructions
1. Make the sponge cake:

Preheat oven to 175Β°C / 350Β°F. Line or grease a round cake tin.

Beat eggs, sugar, and vanilla with an electric mixer until pale, thick, and tripled in volume (about 7β10 min).

Gently fold in sifted flour and salt using a spatula, being careful not to deflate the batter.

Pour into the pan and bake 25β30 minutes, or until golden and springy.

Let cool completely, then slice into 2 or 3 even layers.
2. Prepare the caramel sauce:

In a saucepan, heat sugar and water over medium heat β do not stir, just swirl the pan occasionally.

Cook until it turns deep amber.

Carefully add warm cream (it will bubble up), stir continuously.

Add butter and salt, stir until smooth. Let cool to room temp.
3. Whip the caramel cream:

Beat cold cream with vanilla until soft peaks.

Add caramel sauce (2β3 tbsp or to taste) and beat until firm but smooth. Chill until ready to use.
4. Assemble the cake:

Place first cake layer on a plate, spread with caramel cream.

Repeat with remaining layers.

Frost the top and sides with the rest of the cream.

Drizzle extra caramel sauce on top and let it drip down the sides for a “drip cake” effect.
