Caramel Cream Cake

Here’s a decadent and smooth Caramel Cream Cake recipe β€” layers of soft sponge, rich caramel, and whipped cream. Perfect for celebrations or a cozy dessert. 🍰✨


🍰 Caramel Cream Cake

🧾 Ingredients (for a 20–22 cm / 8–9″ cake)

Sponge Cake:

  • 4 large eggs (room temp)

  • 120 g (2/3 cup) sugar

  • 120 g (1 cup) all-purpose flour

  • 1 tsp vanilla extract

  • Pinch of salt

Caramel Sauce:

  • 200 g (1 cup) sugar

  • 60 ml (ΒΌ cup) water

  • 120 ml (Β½ cup) heavy cream (warm)

  • 40 g (3 tbsp) butter

  • Pinch of sea salt (optional, for salted caramel)

Caramel Cream Filling:

  • 400 ml (1β…” cups) heavy cream (cold)

  • 2–3 tbsp prepared caramel sauce (adjust to taste)

  • 1 tsp vanilla extract

  • 1 tbsp powdered sugar (optional, for sweetness)


🧁 Instructions

1. Make the sponge cake:

  1. Preheat oven to 175Β°C / 350Β°F. Line or grease a round cake tin.

  2. Beat eggs, sugar, and vanilla with an electric mixer until pale, thick, and tripled in volume (about 7–10 min).

  3. Gently fold in sifted flour and salt using a spatula, being careful not to deflate the batter.

  4. Pour into the pan and bake 25–30 minutes, or until golden and springy.

  5. Let cool completely, then slice into 2 or 3 even layers.


2. Prepare the caramel sauce:

  1. In a saucepan, heat sugar and water over medium heat β€” do not stir, just swirl the pan occasionally.

  2. Cook until it turns deep amber.

  3. Carefully add warm cream (it will bubble up), stir continuously.

  4. Add butter and salt, stir until smooth. Let cool to room temp.


3. Whip the caramel cream:

  1. Beat cold cream with vanilla until soft peaks.

  2. Add caramel sauce (2–3 tbsp or to taste) and beat until firm but smooth. Chill until ready to use.


4. Assemble the cake:

  1. Place first cake layer on a plate, spread with caramel cream.

  2. Repeat with remaining layers.

  3. Frost the top and sides with the rest of the cream.

  4. Drizzle extra caramel sauce on top and let it drip down the sides for a “drip cake” effect.

  5. Chill for at least 1 hour before serving.


🌟 Optional Decorations

  • Toffee shards or caramel popcorn

  • Sea salt flakes on top

  • Roasted nuts (pecans or hazelnuts)

  • Gold leaf or edible glitter for a fancy look
