Cabbage soup is a hearty, healthy, and easy-to-make dish that’s perfect for a light meal or a comforting dinner. It’s packed with vegetables and can be made in a variety of ways, but here’s a simple, flavorful recipe that you’ll love!

Simple Cabbage Soup Recipe

Ingredients:

  • 1 medium head of cabbage, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 large carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth (or chicken broth for more flavor)
  • 2 teaspoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 bay leaf (optional)
  • 1 tablespoon lemon juice (optional, for brightness)

Instructions:

  1. Sauté the vegetables:
    • In a large pot or Dutch oven, heat the olive oil over medium heat.
    • Add the chopped onion and garlic and sauté for 3-4 minutes, until the onion becomes translucent and the garlic is fragrant.
  2. Add the rest of the vegetables:
    • Add the chopped carrots, celery, and cabbage to the pot. Stir well and cook for 5-7 minutes, letting the vegetables soften a bit.
  3. Add the broth and seasonings:
    • Pour in the vegetable broth and diced tomatoes (with their juice), then add the thyme, oregano, salt, and pepper.
    • Add the bay leaf if using.
    • Bring the soup to a simmer, and reduce the heat to low. Let it simmer for 30-45 minutes, or until the vegetables are tender and the flavors have melded together.
  4. Finish the soup:
    • Taste and adjust seasoning, adding more salt, pepper, or herbs if needed.
    • If you like a bit of brightness, add a tablespoon of lemon juice just before serving.
  5. Serve:
    • Serve hot, with a slice of crusty bread on the side if you like!

Optional Add-ins:

  • Beans: You can add a can of white beans, kidney beans, or any bean of your choice to make the soup heartier.
  • Protein: Add cooked chicken, turkey, or sausage to make it more filling.
  • Spices: For a bit of heat, add a pinch of red pepper flakes.

Tips:

  • Storage: This soup keeps well in the refrigerator for 4-5 days and can be frozen for longer storage.
  • For extra flavor: You can top each bowl with grated Parmesan cheese or a dollop of sour cream.
