🥬 Classic Cabbage Soup
🧾 Ingredients:

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

3 carrots, sliced

2 celery stalks, sliced

1 small head of green cabbage, chopped (about 6 cups)

1 can (14.5 oz / 400g) diced tomatoes (with juice)

6 cups vegetable or chicken broth
-
1 teaspoon dried thyme

1/2 teaspoon paprika (optional)

Salt and pepper, to taste

Optional: 1 bay leaf, chili flakes for heat

Optional additions: green beans, zucchini, or cooked beans/lentils

Sauté aromatics:
Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook for 5–7 minutes, until softened. Add the garlic and cook for 1 more minute. -
Add remaining ingredients:
Stir in the cabbage, diced tomatoes, broth, and seasonings. Bring to a boil. -
Simmer:
Reduce heat and let simmer for 25–30 minutes, or until the cabbage and vegetables are tender. -
Taste and adjust:
Add more salt, pepper, or spices as needed. Remove bay leaf if used. -
Serve hot, optionally with a sprinkle of fresh herbs (parsley, dill, or thyme) and a squeeze of lemon juice for brightness.
