🥣 Cabbage Soup Recipe
🛒 Ingredients (Serves 6–8):

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

3 carrots, sliced

2 celery stalks, sliced

½ head of green cabbage, chopped

1 zucchini (optional), chopped

1 can (14.5 oz) diced tomatoes
-
6 cups vegetable broth (or chicken broth)

1 teaspoon dried thyme
-
1 teaspoon paprika
-
½ teaspoon black pepper
-
Salt to taste

1–2 teaspoons lemon juice or a splash of vinegar (optional, for brightness)

Fresh parsley for garnish

Sauté Aromatics:
Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until fragrant, 2–3 minutes. -
Add Veggies:
Stir in carrots, celery, and zucchini. Cook for 5 minutes. -
Add Cabbage & Broth:
Add chopped cabbage, diced tomatoes (with juices), broth, thyme, paprika, salt, and pepper. -
Simmer:
Bring to a boil, then reduce heat. Cover and simmer for 25–30 minutes, or until vegetables are tender. -
Finish & Serve:
Add lemon juice or vinegar for brightness. Taste and adjust seasoning. Garnish with chopped parsley.
