  • 1 teaspoon ground cumin (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1-2 teaspoons lemon juice (optional, for added brightness)

Instructions:

1. Sauté the vegetables:

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften and the onions become translucent.

2. Add the cabbage and other vegetables:

  • Add the chopped cabbage to the pot, along with the bell pepper and zucchini (if using). Stir everything together and let it cook for another 3-4 minutes, allowing the cabbage to soften a little.

3. Add the liquids and seasonings:

  • Pour in the vegetable broth and diced tomatoes. Stir in the turmeric, cumin, oregano, basil, salt, pepper, and cayenne pepper (if using). Bring the soup to a boil.

4. Simmer the soup:
