  • 1 small onion, chopped (optional for extra flavor)
  • 1/2 teaspoon garlic powder (optional)
  • Salt and pepper, to taste
  • 1/4 teaspoon paprika (for a smoky flavor)
  • 1/4 cup shredded cheese (cheddar or your choice, optional)
  • Fresh herbs (parsley, chives, or thyme for garnish, optional)
  • Red pepper flakes (optional, for a little heat)

Instructions:

  1. Prepare the cabbage:
    • Wash and slice the cabbage into thin strips or shred it, depending on your texture preference. You can also use pre-shredded cabbage for convenience.
  2. Cook the cabbage:
    • Heat 2 tablespoons of olive oil (or butter) in a large skillet over medium heat.
    • Add the chopped onion (if using) and cook for 2-3 minutes until softened and fragrant.
    • Add the sliced cabbage to the skillet and sauté for about 5-7 minutes, stirring occasionally, until the cabbage starts to soften and gets slightly caramelized. You can cover the skillet to help it cook faster.
    • Season with garlic powder, paprika, salt, and pepper to taste. If you like a little heat, sprinkle in some red pepper flakes.
  3. Scramble the eggs:
    • While the cabbage is cooking, crack the eggs into a bowl and whisk until they’re smooth.
    • Once the cabbage is tender, make a space in the center of the skillet and pour the eggs into it. Let them cook undisturbed for a minute or two, then gently stir them into the cabbage. Continue to cook, stirring occasionally, until the eggs are scrambled and cooked through.
  4. Finish the dish:
    • If you’re using cheese, sprinkle it on top of the eggs and cabbage, allowing it to melt.
    • Garnish with fresh herbs like parsley or chives for a burst of freshness.
  5. Serve:
    • Serve the cabbage and eggs warm as a main dish or side. You can pair it with toast, avocado, or even a bit of hot sauce for added flavor.
