🧀 Broccoli Cheese Balls
🥦 What They Are:
Chopped broccoli mixed with sharp cheddar, herbs, and breadcrumbs, rolled into balls and baked or fried until golden. Think: tater tots meet cheesy broccoli casserole.
🧾 Ingredients:

2 cups finely chopped cooked broccoli (steamed or blanched)

1 cup shredded sharp cheddar cheese

¼ cup grated Parmesan cheese

1 garlic clove, minced

½ tsp onion powder

½ tsp salt

¼ tsp black pepper
-
1 egg, lightly beaten
-
⅓ cup breadcrumbs (plus more for coating) — use panko for extra crunch

Optional: pinch of red pepper flakes for heat

1. Preheat Oven or Heat Oil:

For baking: Preheat oven to 400°F (200°C) and line a baking sheet with parchment.

For frying: Heat oil in a skillet or deep fryer to 350°F (175°C).
2. Make the Mixture:

In a large bowl, combine broccoli, cheeses, garlic, seasonings, egg, and breadcrumbs.

Mix until everything holds together (add a little more breadcrumb if too wet).
3. Form the Balls:

Scoop and roll into 1 to 1½ inch balls.

Roll each ball in extra breadcrumbs for a crispy outer layer.
4. Cook:

Bake for 20–25 minutes, flipping halfway, until golden and crispy.

Fry in hot oil for 2–3 minutes until deep golden brown. Drain on paper towels.
