Ingredients (makes 2 sandwiches):

  • 4 slices good-quality bread (sourdough, brioche, or rustic white work great)

  • 6–8 oz brie cheese (rind on or off, your choice), sliced

  • 3–4 tablespoons blackberry jam or preserves

  • 2 tablespoons butter (softened)

  • Optional: fresh thyme leaves or a few arugula leaves (for an herby or peppery twist)


Instructions:

  1. Prep the bread:
    Spread butter on one side of each slice of bread (these will be the outsides).

  2. Assemble the sandwich:

    • On the non-buttered side, spread blackberry jam evenly.

    • Layer with sliced brie (enough to fully cover but not overflow).

    • Add fresh thyme or arugula if using.

    • Top with the other slice of bread, buttered side facing out.

  3. Grill it:
    Heat a skillet or grill pan over medium heat. Place the sandwiches in the pan and grill for about 3–4 minutes per side, pressing gently with a spatula, until golden brown and the brie is melted and gooey.

  4. Serve:
    Let it rest for a minute, then slice in half and serve warm.
