🐟 Best Salmon Patties (a.k.a. Salmon Cakes or Croquettes)
📝 Ingredients:

1 (14.75 oz) can salmon, drained and flaked (or 1½ cups cooked salmon)

½ cup breadcrumbs (or crushed saltines or panko)

2 eggs
-
¼ cup finely chopped onion
-
2 tablespoons chopped parsley or green onions
-
1 tablespoon lemon juice
-
1 teaspoon Dijon mustard (optional but adds depth)
-
½ teaspoon garlic powder
-
Salt & pepper, to taste

2–3 tablespoons oil (vegetable or olive oil for frying)
🔥 Instructions:
1. Mix It Up
In a large bowl, combine:

Flaked salmon (remove skin and bones if using canned)

Eggs, breadcrumbs, onion, parsley, lemon juice, mustard, garlic powder, salt & pepper
Mix until combined. The mixture should hold together. If too wet, add more breadcrumbs; if too dry, add a splash of milk or a little mayo.
2. Shape the Patties
Form into 4–6 patties (about ½ to ¾ inch thick).
3. Cook

Heat oil in a skillet over medium heat.

Fry patties for 3–4 minutes per side or until golden brown and crispy.

Drain on paper towels.
