🍖 Ingredients:

  • 2 lbs beef chuck, cut into 1.5-inch cubes

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 3 tbsp tomato paste

  • 2 tbsp all-purpose flour

  • 3 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

  • 4 carrots, peeled & chopped

  • 3 potatoes, peeled & cubed

  • 1 cup frozen peas

  • Salt & pepper, to taste


⚙️ Instructions:

1. Sauté & Brown

  • Set Instant Pot to Sauté (High). Add olive oil.

  • Brown beef in batches (don’t overcrowd), about 3-4 minutes per batch. Set aside.

2. Build the Base

  • Add onions to pot. Sauté until soft (3–4 min).

  • Stir in garlic and tomato paste, cook 1 min.

  • Sprinkle in flour, stir constantly for 1 minute to cook off raw flavor.

3. Deglaze

  • Slowly pour in beef broth, scraping up browned bits.

  • Add back the beef. Stir in Worcestershire sauce, thyme, rosemary, and bay leaf.

  • Add carrots and potatoes. Season with salt & pepper.

4. Pressure Cook

  • Lock lid. Set to Pressure Cook (High) for 35 minutes.

  • Natural release for 10 minutes, then quick release the rest.

5. Final Touch

  • Open lid, stir in frozen peas. Let sit 5 minutes to heat through.

  • Adjust salt/pepper to taste. Remove bay leaf.
