Ingredients:

  • 2 cups leftover mashed potatoes (cold or room temperature)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 2 tbsp green onions or chives, finely chopped (optional)
  • 1/4 tsp garlic powder (optional)
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 cups breadcrumbs (preferably panko for extra crispiness)
  • 1/4 cup grated Parmesan cheese (optional)
  • Vegetable oil, for frying

Instructions:

1. Prepare the Mashed Potato Mixture:

  • In a bowl, combine the mashed potatoes with the shredded cheese, green onions or chives (if using), garlic powder, salt, and pepper. Mix until the ingredients are well incorporated.
  • If the mixture feels too soft, you can add a small amount of flour to help it bind together.

2. Shape the Potato Balls:

  • Take a spoonful of the mashed potato mixture and roll it into a ball, about the size of a golf ball. Repeat until all the mashed potato mixture is used up. You should get around 12-14 balls, depending on the size.
  • Place the balls on a plate or tray as you go.

3. Coat the Potato Balls:

  • Set up a breading station. Place the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs (mixed with Parmesan cheese if using) in a third dish.
  • Roll each potato ball first in the flour, ensuring it is coated evenly.
  • Next, dip it into the beaten eggs, and then roll it in the breadcrumb mixture, pressing lightly to make sure the breadcrumbs stick. Repeat with the remaining balls.

4. Fry the Potato Balls:

  • Heat about 2-3 inches of vegetable oil in a deep frying pan or skillet over medium-high heat. To test if the oil is hot enough, drop a small piece of breading into the oil; if it sizzles immediately, it’s ready.
  • Carefully place the coated potato balls into the hot oil, a few at a time, being sure not to overcrowd the pan. Fry for about 3-4 minutes, or until they are golden brown and crispy on all sides.
  • Use a slotted spoon to remove the potato balls from the oil and place them on a paper towel-lined plate to drain excess oil.

5. Serve:

  • Serve the fried mashed potato balls hot with dipping sauces like ranch dressing, ketchup, or sour cream.
