Here’s a Best Ever Instant Pot Pot Roast recipe — juicy, fork-tender beef with rich gravy, cooked in a fraction of the time thanks to your pressure cooker. This is comfort food at its best!


🥩 Best Ever Instant Pot Pot Roast

🕒 Total Time: ~1 hr 45 mins (includes pressure build/release)

🍽️ Serves: 6–8


🛒 Ingredients

For the Roast:

  • 3–4 lb chuck roast (well-marbled is best)

  • Salt & black pepper

  • 2 tbsp olive oil

  • 1 large onion, sliced

  • 4 cloves garlic, minced

  • 1 tbsp tomato paste (optional, for richness)

  • 1 cup beef broth (or use red wine for deeper flavor)

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

Veggies (Add later):

  • 1 lb baby potatoes or chopped Yukon Golds

  • 4 large carrots, peeled and cut into chunks

  • 2 stalks celery, chopped (optional)


🧑‍🍳 Instructions

1. Season and Sear the Roast:

  • Pat roast dry and season generously with salt and pepper.

  • Set Instant Pot to Sauté mode. Add olive oil.

  • Brown the roast on all sides (about 4–5 minutes per side). Remove and set aside.

2. Sauté Aromatics:

  • Add onions and sauté 2–3 minutes until softened.

  • Stir in garlic and tomato paste (if using), cook 1 more minute.

  • Deglaze with beef broth (or wine), scraping up browned bits.

3. Pressure Cook:

  • Return roast to the pot. Add Worcestershire, thyme, rosemary, and bay leaf.

  • Cancel Sauté, close the lid, set valve to Sealing.

  • Cook on High Pressure for 60–70 minutes (closer to 70 for a larger roast).

  • Let pressure naturally release for at least 15 minutes before opening.

4. Add Vegetables:

  • Open lid, add potatoes, carrots, and celery on top.

  • Reseal and cook on High Pressure for 10 minutes.

  • Quick release pressure once done.

5. Optional Gravy:

  • Remove roast and veggies. Set pot to Sauté.

  • Whisk in a slurry (2 tbsp cornstarch + 2 tbsp cold water) into the juices.

  • Simmer until thickened. Adjust seasoning if needed.


📝 Tips for Success

  • Chuck roast is the best cut — it becomes incredibly tender under pressure.

  • Browning the meat adds deep flavor, so don’t skip it!

  • For a richer sauce, use half wine, half broth.
