🍲 Best Ever Beef Stew
Ingredients:

2.5 to 3 lbs beef chuck roast, cut into 1½-inch cubes

3 tablespoons olive oil, divided
-
Salt and black pepper, to taste

1/4 cup all-purpose flour (for dredging)
-
1 large yellow onion, chopped
-
3 cloves garlic, minced
-
3 tablespoons tomato paste
-
1 cup dry red wine (or beef broth)
-
4 cups beef broth (low sodium recommended)
-
1 tablespoon Worcestershire sauce
-
1 teaspoon dried thyme
-
1/2 teaspoon dried rosemary
-
2 bay leaves
-
4 carrots, peeled and cut into 1-inch pieces
-
4 Yukon Gold potatoes, peeled and cut into chunks
-
2 celery stalks, sliced
-
1 cup frozen peas (add at end)

Fresh parsley, chopped (for garnish)
🔥 Instructions:
1. Brown the beef:

Pat the beef dry and season with salt and pepper.

Lightly dredge in flour.

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Sear beef in batches until browned on all sides. Don’t overcrowd. Remove and set aside.
2. Sauté aromatics:

Add remaining 1 tablespoon oil to the pot.

Sauté onions until softened (about 5 minutes).

Stir in garlic and tomato paste; cook for 1–2 minutes more.
3. Deglaze & build the broth:

Pour in wine to deglaze the pan, scraping up the browned bits.

Simmer for 2–3 minutes to reduce slightly.

Stir in beef broth, Worcestershire, thyme, rosemary, and bay leaves.
4. Simmer the stew:

Return the beef to the pot.

Bring to a simmer, then cover and reduce heat to low.

Simmer for 1.5 to 2 hours, or until the beef is fork-tender.
5. Add vegetables:

Add carrots, potatoes, and celery.

Simmer uncovered for another 30–40 minutes, until vegetables are soft and stew is thickened.
6. Finish & serve:

Stir in frozen peas and cook for 5 minutes.

Remove bay leaves. Adjust salt and pepper to taste.

Garnish with fresh parsley and serve with crusty bread.
