Ingredients:

  • 6 medium-sized potatoes (Yukon Gold or Russet work well)
  • 3 tbsp olive oil (or melted butter)

  • Salt and pepper, to taste
  • 1/2 tsp paprika (optional, for color and extra flavor)

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the potatoes:

    • Wash the potatoes thoroughly and pat them dry.
    • Place the potatoes on a cutting board. Using a sharp knife, score each potato by making thin cuts about 1/8 to 1/4 inch apart, cutting down about halfway through the potato. Make sure not to cut all the way through; you want the slices to stay connected at the bottom. This scoring will allow the olive oil and seasonings to infuse the potato as they cook, making them crispier and more flavorful.
  3. Season the potatoes:

    • In a small bowl, mix together the olive oil (or melted butter), garlic, rosemary (or thyme), paprika, salt, and pepper.
    • Use a brush or spoon to evenly coat each potato with the seasoning mixture, making sure to get some of the oil and herbs into the cuts.
  4. Bake the potatoes:

    • Arrange the potatoes on the prepared baking sheet. Place them cut-side up so the seasoning and oils can seep into the scored areas.
    • Bake for 40-45 minutes, or until the potatoes are golden and crispy on the outside and fork-tender on the inside. You can check by poking the thickest part with a fork or knife—it should slide in easily.
  5. Optional: Add Parmesan:

    • If you want to add Parmesan cheese, sprinkle it over the potatoes during the last 5 minutes of baking so it can melt and get a bit crispy.
