Here’s a super easy and incredibly crispy Sheet Pan Scored Potatoes recipe — no fuss, just golden roasted potatoes with a beautiful texture, crispy edges, and buttery flavor. Perfect as a side for any meal!

Ingredients

  • 4 medium Yukon Gold or russet potatoes

  • 3 tbsp olive oil or melted butter (or a mix)

  • 3 garlic cloves, minced (or 1 tsp garlic powder)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika or smoked paprika (optional)

  • 1 tsp dried herbs (thyme, rosemary, oregano, or Italian mix)

Optional for serving:

  • Fresh parsley or chives, chopped

  • Grated Parmesan cheese

  • Sour cream or dipping sauce


Instructions

1. Prep the Potatoes:

  • Wash and dry the potatoes (no need to peel).

  • Slice each potato in half lengthwise.

  • Place cut side up. Using a sharp knife, score a crosshatch pattern into the flat side (cut about ¼-inch deep).

2. Season:

  • In a small bowl, mix olive oil (or butter), garlic, salt, pepper, paprika, and herbs.

  • Brush or spoon the mixture generously over the scored sides of the potatoes, making sure it gets into the cuts.

3. Bake:

  • Place potatoes cut side up on a parchment-lined or greased baking sheet.

  • Bake at 425°F (220°C) for 40–50 minutes, or until golden brown and crispy on top, and soft inside.
    (Check with a fork – it should glide in easily.)

4. Finish & Serve:

  • Optionally, sprinkle with Parmesan or fresh herbs right after baking.

  • Serve hot with dipping sauce, aioli, or sour cream.


✅ Tips

  • Want extra crisp? Broil for 2–3 minutes at the end.

  • Use duck fat or bacon drippings for a gourmet touch.

  • For loaded potatoes, add shredded cheese and bacon bits during the last 10 minutes.
