🥔 Best Easy Sheet Pan Scored Potatoes
🔪 What Are Scored Potatoes?
Scored potatoes are halved and shallowly crosshatched (scored) to maximize crispiness and flavor — they’re like mini baked potatoes with extra surface area for seasoning.
✅ Ingredients:
-
6 small to medium Yukon Gold or baby potatoes
-
2–3 tbsp olive oil (or melted butter for extra richness)
-
1 tsp garlic powder
-
1 tsp paprika (smoked or sweet)
-
½ tsp dried thyme or rosemary
-
Salt and black pepper to taste
-
Optional toppings: Parmesan, fresh herbs, or a drizzle of lemon juice
👩🍳 Instructions:
1. Preheat the oven:
-
Set your oven to 425°F (220°C).
-
Line a sheet pan with parchment paper or lightly oil it.
2. Prep the potatoes:
-
Wash and dry the potatoes. Cut them in half lengthwise.
-
Using a small knife, lightly score the cut side of each half with a shallow criss-cross pattern (don’t cut all the way through).
3. Season:
-
In a bowl, mix olive oil, garlic powder, paprika, thyme, salt, and pepper.
-
Brush or spoon the oil mixture generously onto the cut/scored side of each potato.
4. Bake:
-
Place potatoes cut side down on the sheet pan.
-
Bake for 30–40 minutes until the bottoms are deep golden brown and the flesh is tender.
5. Finish & serve:
-
Flip them cut-side up (optional: broil for 2–3 minutes for extra crisp edges).
-
Sprinkle with Parmesan, fresh parsley, or a squeeze of lemon if desired.
🔁 Variations:
-
Add a sprinkle of chili flakes for heat.
-
Swap paprika for curry powder or Italian seasoning.
-
Try sweet potatoes for a twist (bake 5–10 minutes longer).
