🔪 What Are Scored Potatoes?
Scored potatoes are sliced on top in a crisscross pattern — this helps them crisp up beautifully while absorbing flavors from seasonings and oil.
📝 Ingredients:

6–8 medium Yukon Gold or red potatoes

3 tbsp olive oil or melted butter

3 cloves garlic, minced (or 1 tsp garlic powder)

1 tsp salt

½ tsp black pepper
-
1 tsp paprika or smoked paprika (optional for color & flavor)

Fresh herbs (like rosemary, thyme, or parsley — optional)

Grated Parmesan (optional, for a cheesy crust)
🔥 Instructions:
1. Preheat oven to 425°F (220°C)
2. Prep the Potatoes:

Wash and dry the potatoes (no need to peel).

Slice each potato in half lengthwise.

Using a sharp knife, score the cut side in a shallow crisscross pattern (don’t cut too deep — about ⅛ to ¼ inch).
3. Season:

Place scored-side-up on a parchment-lined or lightly greased sheet pan.

In a small bowl, mix olive oil, garlic, salt, pepper, and paprika.

Brush or spoon the mixture generously over the scored surface.
