Beef Strips with Macaroni and Cheese, Potato Salad, and Sautéed Bell Peppers

Here’s a simple recipe for Beef Strips with Macaroni and Cheese, Potato Salad, and Sautéed Bell Peppers:

Ingredients:

For the Beef Strips:

  • 1 lb beef sirloin or flank steak, cut into thin strips
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 1 tablespoon soy sauce (optional for extra flavor)
  • Salt and pepper to taste
  • Fresh herbs (optional, like parsley or thyme)

For the Macaroni and Cheese:

  • 1 cup elbow macaroni
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste

For the Potato Salad:

  • 4 medium potatoes, peeled and cubed
  • 1/2 cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • 1/4 cup chopped green onions or celery (optional)
  • 1 boiled egg (optional, chopped)

For the Sautéed Bell Peppers:

  • 2 bell peppers (different colors), sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

1. Beef Strips:

  • Heat the olive oil in a large skillet or pan over medium-high heat.
  • Add the beef strips and cook for 3-5 minutes until browned. Remove from the pan and set aside.
  • In the same skillet, add a little more oil if needed, then sauté the garlic and onion until softened.
  • Add the bell pepper slices and cook until just tender.
  • Return the beef to the pan, add soy sauce (if using), and cook for another 2-3 minutes, seasoning with salt and pepper to taste. Set aside.

2. Macaroni and Cheese:

  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
  • Slowly whisk in the milk, bringing it to a simmer until it thickens, about 3-5 minutes.
  • Stir in the shredded cheese and continue stirring until melted and smooth.
  • Add the cooked macaroni to the cheese sauce, and season with salt and pepper.

3. Potato Salad:

  • Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and cool slightly.
  • In a large bowl, combine the mayonnaise, mustard, vinegar, and salt and pepper. Mix until smooth.
  • Add the cooled potatoes and fold them into the dressing.
  • If desired, add chopped green onions or celery for extra crunch, and a boiled egg for additional flavor.

4. Sautéed Bell Peppers:

  • Heat olive oil in a pan over medium heat.
  • Add the bell pepper slices and sauté for 4-5 minutes until softened, but still slightly crisp.
  • Season with salt and pepper.

To Serve:

  • Plate the beef strips with a scoop of macaroni and cheese on the side, along with a generous helping of potato salad and sautéed bell peppers.
