Beef Liver and Onions Recipe

Ingredients:

  • 1 lb beef liver, thinly sliced
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil or butter
  • 1 tablespoon flour (optional, for coating liver)
  • 1/2 cup beef broth or water
  • 1 tablespoon balsamic vinegar or red wine vinegar (optional, for added depth of flavor)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the liver: If the liver is not already sliced, cut it into thin pieces (about 1/4 inch thick). Some people prefer to soak liver in milk for about 30 minutes to reduce any strong flavors, but this is optional.
  2. Coat the liver (optional): Lightly dust the liver slices with flour to give them a nice crust when cooked. This step is optional but helps to create a bit of texture.
  3. Cook the onions: In a large skillet or pan, heat 1 tablespoon of oil or butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they become soft and caramelized, about 10-12 minutes. Once the onions are browned and tender, remove them from the pan and set them aside.
  4. Cook the liver: In the same pan, add the remaining oil or butter. Increase the heat to medium-high. Add the liver slices and cook for about 2-3 minutes per side, or until browned and cooked through but still tender. Do not overcook, as liver can become tough if cooked too long.
  5. Add liquid: Once the liver is cooked, add the beef broth (or water) and balsamic vinegar (if using) to the pan, stirring to deglaze and incorporate any flavorful brown bits from the bottom of the pan.
  6. Combine: Return the caramelized onions to the pan, mixing everything together. Let it simmer for 1-2 minutes to meld the flavors.
  7. Season and serve: Taste and adjust the seasoning with salt and pepper as needed. Garnish with fresh parsley if desired.

Serve your beef liver and onions over mashed potatoes, rice, or with a side of vegetables for a wholesome meal.
