BEEF ENCHILADAS with extra cheese on top

Here’s a mouthwatering recipe for Cheesy Beef Enchiladas — packed with seasoned ground beef, rolled in soft tortillas, smothered in rich enchilada sauce, and finished with a generous layer of melted cheese on top. Pure comfort food!


🌯🧀 Cheesy Beef Enchiladas with Extra Cheese on Top

🕒 Total Time: ~45 minutes

Serves: 4–6


🧂 Ingredients:

For the Filling:

  • 1 lb (450g) ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning or homemade blend (1 tsp each: chili powder, cumin, paprika; 1/2 tsp oregano, 1/4 tsp salt)

  • 1/4 cup water

  • 1/2 cup enchilada sauce

  • 1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

For Assembly:

  • 8–10 soft flour or corn tortillas

  • 2 cups enchilada sauce (canned or homemade)

  • 2+ cups shredded cheese (go heavy here!)

  • Chopped cilantro or green onions (for garnish)


🔪 Instructions:

1. Cook the Beef Filling:

  • In a skillet, cook ground beef and onion over medium heat until browned.

  • Drain excess fat.

  • Stir in garlic and taco seasoning. Add 1/4 cup water and simmer 2–3 minutes.

  • Stir in 1/2 cup enchilada sauce and 1 cup cheese. Remove from heat.

2. Preheat & Prep:

  • Preheat oven to 375°F (190°C).

  • Lightly grease a 9×13-inch baking dish and spread a few spoonfuls of enchilada sauce on the bottom.

3. Assemble the Enchiladas:

  • Warm tortillas briefly to make them pliable.

  • Spoon beef mixture into each tortilla, roll tightly, and place seam-side down in the dish.

4. Add Sauce & Cheese:

  • Pour remaining enchilada sauce generously over the top.

  • Sprinkle lots of shredded cheese — don’t hold back!

5. Bake:

  • Cover with foil and bake for 20 minutes.

  • Remove foil and bake another 10–15 minutes until bubbly and cheese is golden.


🧄 Optional Add-Ins:

  • Black beans, corn, or green chiles in the filling

  • A spoonful of sour cream mixed into the beef for creaminess

  • Jalapeños on top for spice


🥑 Serve With:

  • Sour cream, guacamole, salsa

  • Spanish rice or a simple green salad
