Ingredients:

For the Beef Filling:

  • 1 lb ground beef
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet (1 oz) taco seasoning (or homemade seasoning mix)
  • 1/2 cup beef broth or water
  • 1 can (4 oz) diced green chilies (optional, for mild heat and flavor)
  • 1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • Salt and pepper to taste

For the Enchiladas:

  • 10 small flour tortillas (or corn tortillas if preferred)
  • 1 can (15 oz) red enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup chopped green onions (optional, for garnish)
  • Sour cream (optional, for serving)
  • Jalapeño slices (optional, for heat)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Prepare the Beef Filling:
    • In a large skillet, cook the ground beef over medium heat, breaking it apart with a spatula as it cooks. Cook for about 6-8 minutes, or until browned and fully cooked.
    • Add the diced onion and garlic to the beef and cook for another 2-3 minutes, until softened.
    • Stir in the taco seasoning, beef broth (or water), and diced green chilies (if using). Let the mixture simmer for about 5 minutes, allowing the flavors to meld together and the sauce to thicken. Season with salt and pepper to taste.
  3. Assemble the Enchiladas:
    • Warm the tortillas in the microwave for about 20-30 seconds so they’re easier to roll and don’t crack.
    • Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Sprinkle some of the shredded cheese on top of the beef filling.
    • Roll up the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas.
  4. Top with Sauce and Cheese:
    • Pour the enchilada sauce evenly over the rolled tortillas in the baking dish.
    • Sprinkle the remaining shredded cheese generously on top of the sauce, making sure each enchilada is covered with a nice layer of cheese. (For extra cheese, don’t hold back! The more, the better.)
  5. Bake:
    • Cover the baking dish with aluminum foil and bake for 20 minutes.
    • After 20 minutes, remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly and starting to brown on the edges.
  6. Serve:
    • Remove from the oven and let the enchiladas cool for a couple of minutes before serving.
    • Garnish with chopped green onions, a dollop of sour cream, and jalapeño slices if you like it spicy.
