Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1/2 cup cooked bacon, chopped (about 4-5 strips)
  • 1/2 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 cup BBQ sauce (use your favorite brand)
  • 1 cup shredded cheddar cheese (or a blend of your favorites)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional, for extra flavor)
  • 1 tablespoon olive oil (for sautéing)
  • Fresh parsley or green onions (optional, for garnish)

Instructions:

  1. Prep the peppers:
    • Preheat your oven to 375°F (190°C).
    • Cut the tops off the bell peppers and remove the seeds and membranes.
    • Lightly coat the peppers with olive oil and place them in a baking dish. Set aside.
  2. Cook the beef mixture:
    • Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened.
    • Add the ground beef to the skillet, breaking it apart as it cooks. Season with salt, pepper, and smoked paprika (if using). Cook until browned and cooked through, about 6-8 minutes.
    • Once the beef is cooked, stir in the chopped bacon and BBQ sauce. Cook for another 2 minutes to combine and warm the sauce.
  3. Stuff the peppers:
    • Spoon the BBQ bacon cheeseburger mixture into the prepared bell peppers, packing it in tightly.
    • Once the peppers are stuffed, top each with a generous handful of shredded cheddar cheese.
  4. Bake:
    • Cover the baking dish with aluminum foil and bake for about 25-30 minutes, or until the peppers are tender.
    • Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  5. Garnish and serve:
    • Once the peppers are done, remove them from the oven. Garnish with chopped parsley or green onions for a fresh finish.
