A basic loaf pan cheesecake is a great way to make a delicious, simple cheesecake without the need for a springform pan. You can make it in a 9×5-inch loaf pan or any similar-sized pan, and it’s perfect for smaller gatherings or if you just want a more manageable-sized cheesecake. Here’s a straightforward recipe:

Basic Loaf Pan Cheesecake Recipe

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs (about 10 graham crackers, crushed)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup unsalted butter, melted

For the filling:

  • 16 oz (2 cups) cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

1. Preheat the oven:

  • Preheat your oven to 325°F (163°C).

2. Prepare the crust:

  • In a bowl, combine the graham cracker crumbs, sugar, and cinnamon (if using).
  • Add the melted butter and mix until the crumbs are evenly moistened.
  • Press the mixture into the bottom of a greased 9×5-inch loaf pan (or any similar-sized pan), creating an even layer.
  • Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

3. Make the cheesecake filling:

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2 minutes).
  • Add the sugar, sour cream, eggs, vanilla extract, and a pinch of salt. Beat until everything is well combined and smooth, scraping the sides of the bowl as needed.

4. Bake the cheesecake:

  • Pour the cheesecake batter into the cooled crust in the loaf pan. Smooth the top with a spatula.
  • Bake for about 45-55 minutes, or until the center is set but still slightly wobbly (it will firm up as it cools). You can check by gently shaking the pan — the center should move just slightly.

5. Cool and chill:

  • Let the cheesecake cool to room temperature, then cover it and refrigerate for at least 4 hours or overnight. This will help it firm up and enhance the flavor.

6. Serve:

  • Once chilled, slice and serve. You can top it with fresh fruit, a drizzle of caramel, or whipped cream, depending on your preference.
