Banana, Garlic, and Dates Recipe

A recipe with banana, garlic, and dates is definitely unique—but with a little creativity, you can balance the sweet, savory, and earthy flavors. Here’s a roasted banana, garlic, and date chutney that works as a bold spread or side dish—great with grilled meats, flatbreads, or even cheese boards.


🍌 Roasted Banana, Garlic & Date Chutney

Sweet, savory, smoky, and a little tangy

🍽️ Serves: 4–6

⏰ Total Time: ~30 minutes


🧄 Ingredients

  • 2 ripe bananas, peeled and sliced

  • 4–5 garlic cloves, peeled

  • 6 Medjool dates, pitted and chopped

  • 1 tbsp olive oil

  • 1 tbsp balsamic vinegar or apple cider vinegar

  • 1/2 tsp ground cumin

  • Pinch of red pepper flakes (optional)

  • Salt and black pepper, to taste

  • Optional: 1 tsp lemon or lime juice for brightness


🔥 Instructions

  1. Roast the Garlic & Banana

    • Preheat oven to 400°F (200°C).

    • Toss garlic and banana slices with olive oil and a pinch of salt.

    • Spread on a baking sheet and roast for 15–18 minutes, until the garlic is soft and the bananas are golden and slightly caramelized.

  2. Cook the Chutney

    • In a small saucepan over medium heat, combine chopped dates, roasted garlic and banana, cumin, vinegar, and 2–3 tbsp water.

    • Simmer gently for 8–10 minutes, stirring often. Add more water if it gets too thick.

  3. Mash or Blend

    • Mash with a fork for a chunky texture or use a food processor for a smoother spread.

    • Stir in lemon/lime juice if using, and adjust seasoning to taste.


✅ Serving Ideas

  • Serve as a chutney or dip with naan, pita, or roasted meats.

  • Spread on toast with goat cheese or ricotta.

  • Pair with grilled halloumi or roasted eggplant.

  • Use it as a glaze for chicken thighs or lamb.
