Here’s a decadent and Southern-inspired twist on classic banana pudding: Bananas Foster Pudding — a creamy layered dessert infused with buttery caramelized bananas, a touch of rum flavor, and silky vanilla pudding. It’s indulgent, comforting, and impressive enough for guests.


🍌 Bananas Foster Pudding

Ingredients:

For the Caramelized Bananas (Bananas Foster Layer):

  • 3 ripe bananas, sliced

  • 3 tbsp unsalted butter

  • 1/3 cup brown sugar

  • 1/2 tsp cinnamon

  • 1–2 tbsp dark rum or 1/2 tsp rum extract (optional)

  • Pinch of salt

For the Pudding Layer:

  • 1 (5.1 oz) box instant vanilla pudding mix

  • 2 cups cold milk (whole milk preferred for creaminess)

  • 1/2 cup heavy cream (optional, for extra richness)

  • 1/2 tsp vanilla extract

For Layering:

  • 1 box vanilla wafers or graham crackers

  • Whipped cream or whipped topping

  • Optional: extra banana slices, toasted pecans


🧑‍🍳 Instructions:

1. Make the Pudding:

  • In a bowl, whisk together the pudding mix, milk, cream (if using), and vanilla extract until smooth and thickened (about 2 minutes).

  • Chill in the fridge while preparing the bananas.

2. Prepare Bananas Foster:

  • In a skillet over medium heat, melt butter.

  • Add brown sugar, cinnamon, and a pinch of salt. Stir until bubbly (about 2 minutes).

  • Gently stir in banana slices and cook for 1–2 minutes until lightly caramelized.

  • Carefully add rum or rum extract (if using). Cook for another 30 seconds. Let it cool slightly.

3. Assemble:

  • In a trifle dish or individual cups, layer:

    1. Vanilla wafers or graham crackers

    2. A spoonful of caramelized bananas

    3. Pudding

  • Repeat layers as desired, ending with pudding on top.

  • Chill for at least 2 hours to let the layers meld and wafers soften.

4. Top and Serve:

  • Top with whipped cream, more bananas, and toasted pecans or crumbled cookies.

  • Optional drizzle: leftover caramel sauce from the pan.
